Giveaway Goodies & Oatmeal Butterscotch Cookies

Monday I had a fabulous little package waiting for me when I came home from work that came all the way from Alaska!


Here are the contents:

Many thanks to Nicole at Running Around the Rock for sponsoring this giveaway!  I love the coconut cream pie Lara Bar flavor and have been meaning to try the PB cookie kind.  I am also interested in expanding my Gu-horizons, as I have only tried a couple flavors (Espresso Love and Vanilla).

I am looking forward to trying out the headlamp, as we are having less and less day light and I would love to be able to see where I am going when running where there are not street lamps!

Monday night I made Oatmeal Butterscotch Cookies as per the recipe on the back of the bag of Nestle Butterscotch chips:

Ingredients
1 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 cup (2 sticks) butter or margarine, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract or grated peel of 1 orange
3 cups quick or old-fashioned oats
1 2/3 cups (11-oz. pkg.) NESTLÉ® TOLL HOUSE® Butterscotch Flavored Morsels

My only modification was using 1/2 c. whole wheat flour/3/4 c. white flour (recipe called for 1 1/4 c. flour). 
I usually substitute a little whole wheat flour into what I’m making, whenever possible, up to one half of what the recipe calls for (that way the baked goods still rise a little).

The Kitchenaid Mixer makes it easy.

I love using parchment paper on baking sheets.  Makes the clean-up 8000x easier.

I ended up with something like 35 cookies – some bigger, some smaller.  Going to have to bring some into work so I don’t eat them all.  Though my husband and I each had 2 fresh out of the oven… I had 3 small ones yesterday… I’m pretty sure he took care of about 5 yesterday.  Baked goods are trouble!

Yesterday afternoon/evening I ran an easy 2 miles, which were supposed to be at a 12:47 pace.  As I have said before, that is hard to do! But I did my best to slow down and ran them at the following paces: 11:23, 11:29.

  3. I tried this recipe and it was fantastic. I made one amendment, which was to add one teaspoon of spiced rum to the batter. My oh my were the finished cookies tasty.

    Oooh, interesting addition! W e don't have any spiced run right now --but we do have...banana, vanilla, coconut from our trip to the caribbean in August :) But next time we get some spiced rum, I will definitely have to try that!
