You combine all of these things in a bowl...
For the cauliflower:
¼ cup plus 1 tablespoon extra-virgin olive oil
1 teaspoon ground coriander
1 teaspoon ground fennel seed
¼ teaspoon ground cumin
½ teaspoon curry powder
½ teaspoon salt
and toss with 1 head cauliflower, cut into medium florets
Put the cauliflower and spices on a pan, and roast in the oven at 450 for 15 minutes, flipping half way through.
Meanwhile, make the yogurt mixture:
For the yogurt:
½ cup full-fat Greek yogurt
1 teaspoon extra-virgin olive oil
Juice and finely grated zest of 1 lemon
½ teaspoon finely chopped mint
Pinch of salt
Then heat the 1 onion, sliced ¼-inch thick and 1 tbsp of olive oil in a pan, until the onions are soft but not yet brown.
If you are better at timing things than me, then maybe the cauliflower will still be in the oven roasting while you are a cooking the onions.
Toss veggies together and fold in 2 tablespoons chopped parsley.
Spread the yogurt mixture on to a plate and serve the cauliflower & onions on top if it.
It was pretty good! I really like oven roasted vegetables. The lemon was pretty strong in this yogurt sauce. I actually used about half an onion, because I don't like a really strong onion taste, and I was saving the other half of the onion for soup my hubby made the next day. You could substitute whole fat Greek yogurt for 2%.

Hmmm, this looks interesting. I don't each much cauliflower but I might have to try this out. Glad you picked up on my vegetable placement. Not many did. :)

ReplyDeleteLooks pretty exotic to me. I love cauliflower but I'm the only one in the house who does so I rarely make it. I served whipped cauliflower at a party and my dad who wouldn't eat it if his life depended on it, thought it was potato dish and liked it!

ReplyDeleteWOW!! That looks fantastic, I am now drooling. I have only roasted cauliflower with olive oil and seasonings and that is pretty rocking but now I am going to have to try this. We don't have a tree either because we will be gone. It is sad.
